For a New Years eve dinner fit for a king. Buy a dozen of the biggest fresh, raw sea scallops you can find. Pat dry and let them assume room temperature while you prepare. Mix flour, seasoned salt, thyme and cracked pepper to taste. Clarify a stick of unsalted sweet cream butter and reserve the butter fat. Discard the solids. Heat clarified butter, crush a clove of fresh garlic and place 6 of the scallops in the pan. Grate lemon zest over the scallops and fry for 3 minutes. Flip scallops over and great more lemon zest over the scallops and fry for an additional 3 minutes. Scallops will be done to perfection (med rare). Overcooked scallops are hard and rubbery and lacking in flavor. Don’t overcook your scallops. Plate hot scallops on a bed of shrimp Lo Mein.
