I spent the day with the smoker making 25 pounds of beef brisket and 18 pounds of pork butt. After a dry rub, It all hit the smoker at 8 am with hickory and pecan wood . After 7 hours, the pork was finished. After 12 hours, the brisket was done. We have guests coming over tomorrow for the fourth of July so I got the meat done in advance.
